What's Cookin' Good Lookin?

One pan wonders, citrus seasoned shrimp and asparagus

One pan wonders are at it again with this super easy and tasty shrimp dish!

Ingredients:

2 bags of raw unpeeled shrimp (you will peel them before!)

1 Lemon

1 jar of citrus based sweet and sour sauce

1 bundle of asparagus

A touch of Olive Oil

Two pinches of salt and pepper

1 box of rice pilaf 

Directions:

Heat oven to 350. As the oven is heating put the shrimp in a strainer and wash them in cold water for 5 minutes, until thawed. While the shrimp is thawing, place the asparagus on the pan (both sides of the pan) and drizzle olive oil on them and salt and pepper to your liking. Next, thinly cut the lemon and place it as a bed in the middle of the pan. Once the shrimp are thawed, peel them and put them in a bath of lemon juice and the sweet and sour sauce. (I premixed the bath.) Finally place them on the bed of lemon slices. Pop into the oven for 22 minutes. As the shrimp is cooking make your favorite rice side on the stove top. My favorite with this dish is a nice light pilaf! Enjoy!
